Advice on running a B&B or Casa Rural?

Does anyone have any experience or knowledge of running a B&B or casa rural in the Huescar/Baza/Garera area? I would like to hear all the experiences good or bad. Or maybe you have visited successful and unsuccessful accommodation.

Are there too many in the area already? not enough? legalities? inspections? taxes? licences? any insight you can give me to help me look into the feasibility of this would be great.

Also B&B vs Cara rural? Or maybe a bit of both? Possibly cavehouse, possibly house (Although I came to this forum as a cave house fan so it will remain my number 1 choice!)
